Salsa Spanish Rice

You could do the typical tomato sauce, rice, chicken bouillon cube. But why when you can use salsa and have a ton of flavor to your rice? It's easier. It's full of flavor. Best thing, you can use whatever salsa you have on hand. If you like it more mild, use mild. Want it spicier? Use a spicier salsa. Super versatile and super yummy.

Ingredients

  • 2 tbsp Oil
  • 2 tbsp Butter
  • 1/2 Onion Diced
  • 1 cup Rice
  • 1 tbsp Chicken Bouillon paste Better Than Bouillon
  • 1 cup Salsa
  • 2 cups Water

Instructions

  1. In a sauté pan that has an accompanying lid, add oil, butter, onion and rice. Cook until golden brown.

  2. Next, add chicken bouillon paste, stirring to coat rice. Then add salsa, stirring to mix. 

  3. Finally, add water. Bring to a boil and then immediately turn down to a simmer. Cover with a lid and cook for 25 minutes. When timer turns off, remove from heat and let rest 15 minutes. Remove lid and fluff with fork. 

    Serve warm.

Recipe Notes

Reheating rice: To have rice that tastes like it was freshly made is super easy. Place desired amount of rice in a bowl. Add a damp paper towel on to the top of rice. Cover with plastic wrap and microwave, 30 seconds at a time until heated through.
