Peaches & Cream Quick Bread

I ❤️Bread. I can't express that enough. All breads. I don't discriminate. Our go to bread here is banana. But I've discovered the peach bread world. Seriously, peach bread. Where have you been all my life? Lightly peach flavored, creamy and moist, this will become a go to staple bread. Perfect as a breakfast muffin as well.

Ingredients

  • 3 cups Flour
  • 1 tsp Salt
  • 2 tsp Baking powder
  • 1.5 cups Sugar
  • 1/2 cup Sour cream
  • 1 cup Half n Half
  • 2 tbsp Vanilla
  • 3 Egg yolks
  • 1/2 cup Oil

Instructions

  1. Preheat oven to 350.

  2. In a bowl, combine flour, salt, and baking powder. Mix with a fork.

  3. In a larger bowl, add sugar, sour cream, vanilla, egg yolks, and oil. Mix well. Add flour mixture, mix until combined, but don't over mix. Fold in peaches.

  4. Prepare two loaf pans, by spraying with nonstick cooking spray. Fill each loaf pan half way with batter. Place into oven, on center rack, and bake for 45-50 minutes. Remove from oven and allow to cool completely. 

  5. To loosen bread, run the back side of a butter knife (the not sharp part) along the edges to release it from the pan. Gently turn upside down to release, turn right side up on to cutting board. Cut and serve.
