Morgan's Italian soup

My husband often raves about my food. Sometimes, we are able to package extra's up and send them to his coworkers for lunch. This particular lunch, his coworker RAVED over. Made me feel all warm and fuzzy inside. So how could I not name it after him? It's like great pasta, in a creamy, soupy form. Comfort food, cold weather food, coworker approved food. Thank you Morgan, for loving my recipes and giving this soup a name!

Ingredients

  • 1.5 lbs Ground turkey
  • 1 Onion Diced
  • 1 tsp Oregano
  • 1/4 tsp Pepper
  • 1.5 tsp Salt
  • 1 14.5 oz Diced tomatoes
  • 5 cups Chicken stock I use Kirklands from Costco
  • 1 24 oz Trader Joe's Bolognese Sauce Or your preferred jarred bolognese sauce
  • 1/2 tsp Chili pepper flakes
  • 1 8 oz Cream cheese Softened
  • 3 tsp Garlic puree Or 3 cloves garlic, minced
  • 1/4 cup Basil Divided, 1/2 in soup, 1/2 for garnish
  • 2 cups Cavatappi noodles

Instructions

  1. Dice onion, set aside.

  2. In large sauté pan, add ground turkey, onion, salt, pepper, oregano. Chop until small pieces and cooked thoroughly.

  3. In a large soup pot, add turkey mixture, diced tomatoes, chicken stock, bolognese sauce, chili flakes and garlic puree. Bring to a boil, reduce to simmer. Add cream cheese and whisk until completely dissolved.

  4. On a medium heat, add pasta. Cover with a lid and cook for 10 minutes, or unit cooked al dente.

  5. Serve inot bowls and garnish with remainder basil.

Recipe Notes

For thinner soup, add more chicken stock if desired at end of cooking process.
Leftovers: Soup will be thickened the next day, more like a casserole. You can eat it this way, and still amazing. But if you'd like it in it's original soup state, when reheating, add more chicken stock unitil you've reached desired thinness.
