Chocolate Chip Banana Bread
Who doesn’t love banana bread?? Actually, my father-in-law. Maybe I could coerce him with this one though. No mixers required and it’s loaded with chocolate chips. Breakfast and dessert in one. Killing two birds with one stone. You’re welcome.
Ingredients
- 4 Banana’s SUPER ripe (almost black, if you have them)
- 3/4 cup Sugar
- 2 tsp Vanilla
- 1/4 cup Extra light olive oil Or canola
- 1.5 cups Flour
- 1 1/4 tsp Baking powder
- 1/2 tsp Baking soda
- 1/8 tsp Salt
- 1/2 tsp Pie spice
- 1/2 cup Chocolate chips
Instructions

Preheat oven to 350.

Spray a 9×5 loaf pan with nonstick cooking spray, set aside.

Mash bananas. Set aside into large mixing bowl. (You’ll use this later).

In a separate large bowl, add all dry ingredients and stir with a fork, just to get them all mixed up.

To the bananas, add sugar, egg, vanilla, oil. Stir until well mixed. Add the dry ingredients to the wet ingredients, just until combined and you don’t see anymore dry bits.

Next, gently fold in chocolate chips. I prefer less chocolate, (hence the 1/2 cup), but if you are a ” I love chocolate” person, increase to a full cup of chocolate chips, to achieve the amount of chocolate as shown in picture. That’s a whole lotta chocolate.

Pour into prepared loaf pan and place into oven. Bake for 50-60 minutes, until no longer jiggly. A TINY bit under done is ok, just means a more moist bread. Let rest until completely cool before slicing.
