Crumble Banana Muffins

Super moist, sweet and topped with a sweet crumble topping.. that makes you want to eat one right after another. Banana bread, in an easy to eat cupcake form.

Ingredients

  • 3/4 cup Butter Room temperature
  • 8 oz Cream Cheese Room temperature
  • 2 cups Sugar
  • 2 Eggs
  • 3 cups Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 1/2` cups Banana's (about 4) Mashed
  • 1 tbsp Vanilla
  • 1 tbsp Pie spice
  • 1 cup Powdered sugar
  • 1 cup Flour
  • 1 stick Butter melted
  • 1 tsp Cinnamon

Instructions

  1. In a bowl, combine flour, baking powder, baking soda, salt and pie spice. Stir together with a fork or whisk unit evenly mixed.

  2. Ina large bowl, using a handheld mixer, beat butter and cream cheese together until light and fluffy.

  3. Add, sugar and mix well. To the mix, add eggs, one at a time and mix well. Add vanilla and mix.

  4. Gradually mix in flour mixture, a little at a time, until completely mixed.

Crumble topping

  1. Melt stick of butter in a medium sized bowl.

  2. Add powdered sugar, flour and cinnamon. Mix with a fork until crumbly.

Banana muffins

  1. Line two muffin pans (12 muffins each, total 24) with paper muffin liners.

    Fill to about 2/3 full.

    Sprinkle crumble mixture on to each muffin, evenly.

    Bake at 350 for 20 minutes, or until done. To insure moistness, don't over cook. It's better to take them out slightly early, as they'll continue to cook in the pan, than to have dry muffins šŸ˜
