Garlic Roasted Potatoes

Quick to pop into the oven as s side dish on a cold winter night, or into the barbecue to go along side that summer time BBQ chicken. Versatile and full of flavor, the perfect compliment to almost any dish, year round. Well, maybe not with pancakes. Actually.. why couldn't they go with pancakes? Hmmmm?

Ingredients

  • 8 Tbsp Butter
  • 4 Tbsp Oil
  • 8 cloves Garlic Minced
  • 1/2 Tsp Pepper
  • 1/4 Tsp Salt More to taste
  • 4 Tbsp Grated parmesan cheese (the powder kind, quality grade) Divided
  • 4 Tbsp Chives Chopped & divided
  • 3 lbs. Baby potatoes Rinsed and will dried. Slice in half.

Instructions

  1. Preheat oven to 400F.

  2. In a microwave safe bowl combine butter and garlic and melt. To the bowl, add half of the chives, pepper, salt and 2 Tbsp. of the parmesan cheese. Stir to mix well.

  3. In a very large bowl, combine prepared potatoes and butter mixture. Stir until well coated.

  4. Using a large cast iron skillet, first spray nonstick cooking spray to coat. Using a basting brush, brush pan with 1 Tbsp of oil evenly over pan. Pour potato mixture into skillet. Spread out evenly.

  5. Cover with foil, and bake for 30 minutes. After 30, minutes, remove foil and continue to cook for another ten minutes or longer, until crispy.

  6. Remove from oven and sprinkle remainder chives and parmesan. Carefully toss to coat. Serve hot.
