Not Your Mama’s Meatloaf

Never, ever would you hear me say I was craving meatloaf for dinner. A big hunk of meat, is just something that my taste buds never desired. Until I added a bit of this and a little of that until all of my family members actually ASK for meatloaf in our meal rotation, self included. Follow the recipe to a T, and I promise, your meatloaf game will never be the same.

Ingredients

  • 1.5 lbs Ground beef You can use ground turkey, just note that it won't be quite as moist.
  • 3/4 cup Italian bread crumbs
  • 1 cup 2% milk
  • 1 Egg Whisked ahead of time on the side.
  • 1 tsp Onion salt
  • 1 tsp Ground mustard
  • 2 Tbsp Worcestershire sauce

Sauteed onions

  • 1 Sweet onion Medium to Large
  • 1 Tbsp Butter

Sauce topping

  • 1 cup Ketchup
  • 1/2 cup Brown sugar Packed

Instructions

  1. Dice onion. Set aside. Melt 2 Tbsp butter in a medium saute pan over a low to medium heat. Add onions and cook until translucent.

  2. While onion is cooking, in a large bowl add beef, bread crumbs, milk, whisked egg, onion salt, mustard and worcestershire sauce. Mix thoroughly with your hands and set aside. When onions are fully cooked, remove from heat and allow to cool.

  3. While onions are cooling, preheat oven to 350. Spray a 7 x 11 glass rectangle dish with nonstick cooking spray. You can use a bigger dish (like a 13×9, if you're going to put diced potatoes around the meatloaf), but if I'm just making the meatloaf on it's own, I prefer this size. I feel like it's able to sit in it's own juices and retain a lot of that moisture. Set pan aside.

  4. Once your onions are cooled enough to handle, add to the bowl of other ingredients and mix in the onions.

  5. Now, plop the loaf mixture into your 7×11 pan. Using your hands, gently shape into a loaf like shape. You should maybe have an 1/2 inch to an inch of space between the meatloaf and pan, going all the way around the pan. Cover tightly with tin foil. Set a timer and bake for 50 minutes.

  6. While meatloaf is baking, combine ketchup and brown sugar in a microwave safe bowl and stir well. I use a fork or whisk. Pop in the microwave for about 30-60 seconds, or until brown sugar is completely dissolved.

  7. When the timer goes off after 50 minutes, remove from oven. Remove foil and spread about half of the ketchup mixture evenly over the meatloaf, reserving remainder ketchup mixture for serving. Place meatloaf back into the oven UNCOVERED for 10 more minutes. When your timer goes of, its done! Trust me, this is fool proof. Remove from the oven and let rest 10 minutes.

    Slice and serve with a dollop of ketchup mixture.
