Healthy Chicken Pomodoro

If you know me, I’m all about the pasta. Pasta with heavy cream, butter (lotsa butta!)and basil! Honestly, who knew pasta could be healthy? Hey, you still need carbs in your life! I’m still shocked that I created a healthy pasta. Best part, it was so full of flavor, you didn’t even miss the cream or butter. I should probably add that it was ready in about 30 minutes. Winner winner, chicken dinner all the way around.

Ingredients

  • 2 Chicken breasts Cut into 1/2-1 inch pieces
  • 1/2 tsp Chili flakes
  • 1 tsp Onion salt
  • 1 Onion Diced
  • 8 Garlic (small) Minced (or 6 large)
  • 2 14.5 oz Fire roasted tomatoes Diced
  • 15 Basil leaves Large, chopped
  • 1 tsp Balsamic Vinegar
  • 2 Tbsp Light olive oil

Angel hair

  • 1 lb Angel hair pasta
  • Water
  • 1 Tbsp Chicken boullion paste I use Better than boullion
  • 1 cup Fresh spinach

Instructions

  1. In a large saute pan, on medium heat, add chicken. Cover chicken with chili flakes, onion salt. Brown until cooked through. When done, remove and let rest on a plate.

  2. To the same pan, on medium heat,  add diced onion, cook until translucent.

  3. Add garlic, cook one minute. Add fire roasted tomatoes. Stir and bring to a simmer.

  4. Add basil. Stir.

  5. Add spinach and cook until barely wilted. 

  6. Add balsamic vinegar. Ad chicken back into the pan. Bring all ingredients to a simmer.

For the pasta

  1. Follow cooking instructions for the pasta.

    When boiling the water, do not add salt. Instead, add chicken boullion paste.

  2. Strain pasta, and place back into the same pot. Pour chicken mixture into pasta and heat through. Serve with a sprinkling of parmesan cheese.
