Bacon Onion Cornbread

A little somethin’ sweet, a little somethin’ savory. Add a little butter, or even honey butter, and this is a perfect companion to any barbeque dish.

Ingredients

  • 6 Slices Bacon Chopped
  • 1/2 Onion Finely diced
  • 3 Cups Marie Callendar’s Cornbread mix
  • 1.5 Cups Water
  • 2 Tbsp. Melted butter

Instructions

  1. Preheat oven to 375.

  2. Using an 8×8 cast iron skillet, spray with nonstick spray. Using a basting brush, spread melted butter over skillet.

  3. In a separate skillet, over medium high heat, cook bacon until crispy. Remove from pan to drain on a plate lined with paper towels.

  4. To the skillet of bacon grease remaining, add onion. Cook 10 minutes. Remove and drain next to bacon on plate lined with paper towels.

  5. In a medium sized mixing bowl, add cornbread mix and water. Mix until just moistened. Add bacon and onion and mix in.

  6. Pour mixture into buttered cast iron skillet. Bake for 25 minutes. Remove and let stand for 10 minutes. 

    Serve with lots of butter!
