Turkey Stuffed Pepper Soup

Ingredients

  • 1.5 lbs Ground turkey
  • 2 tsp Onion salt
  • 2 Green bell peppers Diced
  • 1 Onion Diced
  • 1 tsp Olive oil
  • 2 cloves Garlic Minced
  • 2 cans Petite diced tomatoes 14.5
  • 1 can Tomato sauce 14.5
  • 16 oz Chicken stock or broth
  • 1/2 tsp Basil Dried
  • 1/4 tsp Oregano Dried
  • 1/2 tsp Chili flakes
  • 1 tsp Dried parsley
  • 2 cups White or brown rice Cooked and set aside

Instructions

  1. In a soup pot, add turkey and onion salt. Brown, set aside onto a plate.

  2. To the same pot, add olive oil, bell pepper and onion. Saute 5 minutes. Add garlic and cook one minute.

  3. Add diced tomatoes, tomato sauce, chicken broth, basil, oregano, chili flakes and parsley. Bring to a boil and then turn down to a simmer. Simmer 30 minutes.

  4. While soup is simmering, make your preferred rice.

  5. Into a soup bowl, add about a 1/2 cup rice and desired amount of soup.

Recipe Notes

Rice may be added directly to soup, but will soak up the broth. For best results, make per bowl, adding rice and then soup. If there are leftovers, store separately so as not to have too thick of a soup.
If preferred, you may substitute turkey for beef and chicken stock for beef broth.
