BBQ Chicken Naan Pizza

Pizza that's quick, easy and best of all, requires no kneading or rising for pizza dough because it's made with ready made naan flatbread. A family favorite and a busy night must!

Ingredients

  • 6 Naan flatbread
  • 2 Cups Rotisserie chicken Chopped
  • 2 Corn on cob Kernels cut off cob
  • 1/2 Cup Red Onion Diced
  • 1/2 Cup Cilantro Chopped
  • 1-2 Bottles BBQ sauce 1 cup for mixing with chicken, rest for sauce base on naan
  • 2 Cups Mozzarella Shredded

Instructions

  1. Preheat oven to 350

  2. Line a baking sheet with foil. 

  3. Chop enough of the rotisserie chicken to make 2 cups. Add chicken to a sauce pan with 1 cup of bottled bbq sauce of your choice. Over medium low heat, stir until heated and then reduce to a simmer, just to keep warm.

  4. Cut corn off the cobs. Set aside.

  5. Dice red onion, set aside.

  6. Chop cilantro, set aside.

  7. Lay 6 frozen naan flat breads on to foiled cookie sheet. No need to thaw.

  8. Pour enough BBQ sauce onto each pizza to coat, as if you were making a regular pizza with pizza sauce, leaving the outer edge dry. This will be your crust.

  9. Sprinkle shredded mozzarella cheese to each.

  10. Sprinkle chicken mixture to each.


  11. Sprinkle fresh corn on each.

  12. Finally, sprinkle fresh cilantro on each.

  13. Drizzle a little extra BBQ sauce over each pizza.

  14. Place baking sheet in the oven and bake for 20 minutes or until heated through and cheese is fully melted.

Recipe Notes

Tips and tricks:

Rotisserie chicken: 

I buy the pre-made, pre-shredded package at Costco. 1 package can be used for lots of meals that week and saves time by not having to shred it yourself!

 

Naan: 

You can find smaller packs at Trader Joe's in the frozen section, or if you have a big family like me, I buy the huge package at Costco. We use them for lots of things, even breakfast pizzas or topped with Nutella for example. Oh and garlic bread even! (Can you tell we love Costco 😍?)

BBQ sauce:

I suggest 1-2 bottles because it depends how small/big the bottle is and how saucy you like your pizza. Again for us, we like Sweet Baby Ray's and you guessed it, sold as two big bottles at Costco. Hey, I'd rather you have too much than not enough. Just sayin'.

 

This recipe is so versatile. With the Naan bread, you can make any pizza you want in no time, even letting the little's "make their own" with a variety of toppings. they have fun and dinner is ready quick.
