Penne With Pink Sauce

Perfect pasta with a creamy, pink sauce and just the right amount of kick. This is one of those dishes that makes your mouth want MORE! A simple, but decadent meal that can be thrown together quickly and sure to impress.

Ingredients

  • 1 tbsp Oil
  • 1 tbsp Butter
  • 1 Onion Diced
  • 3 Garlic cloves Minced
  • 1/2 cup White wine
  • 2 cans Tomato sauce
  • 1 cup Heavy cream
  • 8 Basil leaves, chopped 6 for in sauce, 2 for topping after baking
  • 3/4 tsp Chili pepper flakes
  • 2 tsp Chicken bouillon PASTE (not powdered granules) Better Than Bouillon
  • 1 lb Penne pasta
  • 1 16 oz Burrata cheese (optional) I get mine from Trader Joe's. Could substitute mozzarella ( shredded or fresh).

Instructions

  1. Fill a large soup pot of water and place on stove. This will be for your pasta later. Don't turn on the heat yet.

  2. In another large pan (oven safe), melt butter and oil on a low to medium heat. Add onions and cook 5 minutes.

  3. Add garlic, cook one minute.

  4. Add white wine, and turn heat to low. Let simmer until reduced to about half of the original amount.

    While wine is simmering, bring the reserved pot of water for pasta to boil.

  5. When wine is reduced, add tomato sauce, heavy cream, 6 of the basil leaves, chili pepper flakes, and chicken boullion paste. Stir to combine and place on a VERY low heat.

  6. While sauce is simmering, cook penne pasta according to package directions.

  7. When pasta is done cooking, do not drain. Using a large slotted spoon, transfer immediately to sauce. Once you've added all of the pasta, stir until mixed.

  8. Pinch off pieces of burrata and dollop evenly over pasta. You could also use fresh mozzarella balls or even grated mozzarella cheese.

    ( I love burrata because of the silky, creamy texture!)

  9. Bake in an oven preheated to 350 for ten minutes, or until cheese is just melted.

  10. Remove from oven and top with remainder 2 chopped basil leaves.

  11. Serve immediately.
