Carpenters Chicken Pot Pie

Carpenters? Yes, Carpenters. You know, like Sheperds Pie, but with a chicken twist. My husband is in construction. He loves Chicken pot pie and Sheperds pie, so I decided to put the two together. A creamy layer of mashed potatoes on the bottom, a chicken and veggie gravy layer in the middle and a pie like crust topping. He loved it and decided to to name it Carpenters chicken pot pie. He cracks me up šŸ˜‚

Ingredients

  • 25 oz Cream of chicken soup About 2.5 small cans
  • 1/2 Onion Diced
  • 32 oz Chicken stock
  • 1 tbsp Butter
  • 1/4 cup Flour
  • 2 cups Rotisserie Chicken Chopped
  • 1 tbsp Parsley Dried
  • 1 tsp Pepper
  • 1 bag Frozen mixed vegetables
  • 2 cans Crescent roll sheets.

Instructions

  1. On a cutting board, dice onion. Set aside.

  2. Dice rotisserie chicken, enough to make 2 cups. Set aside.

  3. Start mashed potatoes (whichever form you prefer, boxed or fresh).

  4. While potatoes are boiling, to a large pot, on medium heat, add butter and melt. Add diced onions and cook until translucent. Add flour to coat onions and cook 1 minute.

  5. To the pot, add chicken stock, cream of chicken soup and stir.

  6. Add frozen vegetables and chicken. Bring to a boil, reduce to simmer for 10 minutes.

  7. While gravy is simmering, finish mashed potatoes.

  8. In a bowl, using a whisk, add cornstarch and equal amount of water to create a milk like texture. Add to gravy and stir. Bring to a boil (boiling activates cornstarch and causes it to thicken the gravy), reduce to simmer. If you'd like the gravy thicker, repeat this step, 1 tbsp of cornstarch at time, until it is to desired thickness.

  9. Add, pepper and parsley, stir.

  10. Roll out crescent sheets and cut them into squares. They won't be perfect, and that's ok. Whatever shapes they turn out to be is fine, it'll be layered on to the pie anyhow. It'll add character šŸ˜‰

  11. Spray a 13x9 pan with nonstick cooking spray. Spread mashed potatoes into pan, to create a 2 inch layer. Next, with a ladle or big spoon, pour the gravy mixture on to the mashed potato layer. 1-2 inches worth. You want there to be an inch of space left for the crescent layer. If using a more shallow 13x9 pan, just fill enough to leave an inch of space and set aside remainder gravy to save. Now, take the pieces of crescent sheets, and lay across as evenly as possible, to cover the pan. Use rest of pieces to put on first layer, staggering them to cover the pie.

  12. Place in an oven preheated to 375, and bake until crescent sheets are a light, golden brown, fully cooked and edges of gravy are bubbling, about 15-20 minutes. Remove form oven, let rest 10 minutes and serve.
