Lemon Cookies
Lemon Cookies
Soft, chewy, buttery, light, airy, refreshing.. Need I say more? These are everything a lemon cookie should be and MORE.
Ingredients
- 1 Cup Butter Softened
- 2 Cups Sugar
- 1/2 Tsp Vanilla
- 2 Eggs Add one at a time, mixing thoroughly
- 2 Tbsp Lemon zest
- 2 Tbsp Lemon juice Fresh
- 3 Cups Flour
- 1/2 Tsp Salt
- 1/2 Tsp Baking powder
- 1 Cup Powdered sugar
Instructions

Preheat oven to 350 degrees. Grease baking sheets with nonstick cooking spray and set aside. Or cover with parchment paper.

In a stand mixer ( or a large bowl using a hand mixer) add butter, sugar, and vanilla and mix until creamy.

Add eggs, one at a time and mixing well after each addition.

Add lemon zest and juice.

Combine flour, salt and baking powder. Add to batter in small amounts, mixing on slow speed after each addition.

Add powdered sugar to a bowl.

Form dough into a gold ball sized ball. Roll in powdered sugar, equally covering all sides. Place onto cookie sheet. Repeat until you have 12 cookies on the sheet.

Place cookies in oven for 11 minutes. DO NOT OVERCOOK! They're done when the edges are SLIGHTLY GOLDEN. Remove from oven and let sit on the cookie sheet for five minutes.

After five minutes rest time is complete, place each cookie on a cooling rack or if you're like me, a kitchen counter lined with parchment paper.

Repeat until no dough remains.

Store cookies in an airtight container. They'll stay soft and fresh for days!
