Banana Granola Bars

Banana Granola Bars

Soft, chewy granola bars, with all of the taste of homemade banana bread.

Ingredients

  • 3.5 Cups Quick Oats
  • 1 Can Sweetened Condensed Milk !4 oz
  • 1/2 Cup Mashed Banana 1 Medium Banana
  • 1/2 Tsp Cinnamon
  • 1/4 Tsp Nutmeg
  • 1 Tsp Vanilla
  • Cinnamon & Sugar For sprinkling

Instructions

  1. Preheat oven to 350.

  2. Line a 13×9 Baking dish with parchment paper.

    To help the paper fit to the pan, use a little bit of softened butter and with your fingers, coat the pan. This way when you place the parchment paper in, it will stick to the pan and allow you to fully mold the granola to the pan). Using parchment paper allows you to lift the granola out of the pan easily.

    If you don't have parchment paper, you can spray the pan with nonstick spray. (It may be a bit tricky getting the granola out of the pan though).

  3. In a large bowl stir together the sweetened condensed milk, banana, cinnamon, nutmeg and vanilla.

  4. Next, add in the oatmeal and stir until well mixed.

  5. Spoon mixture into parchment lined pan. Using the spoon, press granola into the pan until all corners are filled and the top is flat. If desired, sprinkle with a mix of additional cinnamon and sugar.

  6. Bake for 30 minutes. Remove from oven and let cool until cool to the touch. Lift the granola out of the pan using the sides fo the parchment paper. Cut into desired sized pieces. Aloow to finish cooling for 20 minutes.

  7. Wrap individually in plastic wrap and place into an airtight container. Store in refrigerator for 1 week or freeze.
