Chili Soup
Tastes like chili, feels like a soup. Pour a huge bowl, or serve over rice..this chili is so versatile. Add extra veggies, less veggies.. make it your own! The seasoning is what makes it special. Perfect for a rainy day and feeds a small army.
ingredients:
- 1.5 lbs. ground beef or ground tureky
- 1/2 tsp. onion salt
- 1/2 tsp pepper
- 1 cup of water
- 2 tbsp. oil
- 1 green bell pepper, diced
- 1 whole sweet onion, diced
- 5 cloves garlic,minced
- 3 tbsp. chili powder
- 2 tsp. cumin
- 1 tsp. oregano
- 1 tsp. onion salt
- 1 tsp. pepper
- 1/4 tsp. cayenne
- 46 oz. tomato juice
- 2 14 0z cans diced tomatoes
- 2 cans pinto beans, drained and rinsed
- 1 can tomato sauce
- 1 16 oz bag frozen corn or 1 can corn. or fresh corn off the cob
directions :
- In a sauté pan, brown ground beef. Season with first 1/2 tsp onion salt and 1/tsp of pepper. Add 1 cup of water, to help break down the ground beef.
- In a large soup pot, add 2 tbsp. of oil, low heat.
- Dice bell pepper and onion, add to soup pot. Cook about 5 minutes, until softened.
- Mince garlic. Add to soup pot and cook until fragrant, about a minute.
- Add chili powder, cumin, oregano, remainder 1 tsp onion salt and 1 tsp pepper, cayenne to vegetable mixture. Cook one minute.
- Add to soup pot: ground beef/turkey tomato juice, tomato sauce, diced tomatoes and frozen corn.
- Simmer 30 minutes.
Serve in a bowl, or over rice (My Love’s favorite) and of course sprinkled with grated cheese and sour cream if you please.
