Chili Soup

Tastes like chili, feels like a soup. Pour a huge bowl, or serve over rice..this chili is so versatile. Add extra veggies, less veggies.. make it your own! The seasoning is what makes it special. Perfect for a rainy day and feeds a small army.

ingredients:

  • 1.5 lbs. ground beef or ground tureky
  • 1/2 tsp. onion salt
  • 1/2 tsp pepper
  • 1 cup of water
  • 2 tbsp. oil
  • 1 green bell pepper, diced
  • 1  whole sweet onion, diced
  • 5 cloves garlic,minced
  • 3 tbsp. chili powder
  • 2 tsp. cumin
  • 1 tsp. oregano
  • 1 tsp. onion salt
  • 1 tsp. pepper
  • 1/4 tsp. cayenne
  • 46 oz. tomato juice
  • 2 14 0z cans diced tomatoes
  • 2 cans pinto beans, drained and rinsed
  • 1 can tomato sauce
  • 1 16 oz bag frozen corn  or 1 can corn. or fresh corn off the cob

directions :

  1. In a sauté pan, brown ground beef. Season with  first 1/2 tsp onion salt and 1/tsp of pepper. Add 1 cup of water, to help break down the ground beef.
  2. In a large soup pot, add 2 tbsp. of oil, low heat.
  3. Dice bell pepper and onion, add to soup pot. Cook about 5 minutes, until softened.
  4. Mince garlic. Add to soup pot and cook until fragrant, about a  minute.
  5. Add chili powder, cumin, oregano, remainder  1 tsp onion salt and 1 tsp pepper, cayenne to vegetable mixture. Cook one minute.
  6. Add to soup pot: ground beef/turkey tomato juice, tomato sauce, diced tomatoes and frozen corn.
  7. Simmer 30 minutes.

Serve in a bowl, or over rice (My Love’s favorite) and of course sprinkled with grated cheese and sour cream if you please.
