Cinnamon Crumb Banana Bread
Cinnamon Crumb Banana Bread
Deliciously moist banana bread, with a cinnamon crumble topping. This one is a family fav, a friend fav and my husbands requests to share with coworkers. Great for dessert, an after school snack for the kids or even breakfast with a nice hot cup of coffee.
Ingredients
- 2 Cups Sugar
- 2 Eggs
- 2 Sticks Butter Softened
- 1 Cup Buttermilk
- 4 Bananas Very Ripe
- 4 Cups Flour
- 1 Tsp Salt
- 1 Tsp Baking Soda
- 2 Tsp Baking Powder
- 1 Tsp Cinnamon
- 1 Tsp Nutmeg
Crumb Topping
- 1 Cup Powdered Sugar
- 1 Cup Flour
- 1 Stick Butter Melted
- 1 Tsp Cinnamon
Instructions
-
Preheat oven to 350
-
In a medium sized bowl, combine flour, salt, baking soda, baking powder, cinnamon, nutmeg and mix thoroughly. I use a fork. I'm old school like that. You're just getting those dry ingredients well mixed before adding to your wet ingredients.
-
Next, in a large mixing bowl with a handheld mixer, beat together eggs and sugar. Add softened butter and beat until creamy. Add vanilla and buttermilk and mix. Add bananas, mix.
-
A little at a time, add flour mixture until well incorporated.
-
Spray two loaf pans with non-stick cooking spray. Pour half of the batter into one, and the other half into the other. Set aside.
-
Continue to crumble instructions. Once crumble is complete, sprinkle evenly over both loaf pans. Then place into oven and bake at 350 for 45-60 minutes, being sure not to over cook. As soon as the middle doesn't wiggle, pull them from oven, as they'll continue to cook in the pan. No one wants dry banana bread!
