Twice the Turkey Chili

It's like chili. But with turkey, twice the turkey. So hearty, you won't notice that it's not beef AND healthy. Serve by itself or even over rice. A little spoonful of sour cream, a little cheese..comfort food at it's finest.

Ingredients

  • 1/2 Red Onion Diced
  • 2 Bell peppers (green) Diced
  • 2 cloves Garlic Minced
  • 2 lbs Ground Turkey
  • 2 tsp Onion salt
  • 2 cans Tomato sauce
  • 2 cans Rotel with chilis Mild
  • 1 can Diced Tomatoes
  • 2 cans Pinto beans Drained
  • 1 bag Frozen corn Or sliced fresh off the cob (2)
  • 3 cups Chicken stock or broth
  • 1 tbsp Chili powder
  • Cayenne 1/4 plus 1/8 tsp or to taste
  • 1 tbsp Cumin
  • 1 tbsp Garlic powder
  • 1 can Vegetarian chili

Instructions

  1. Dice onion, set aside.

  2. Dice bell pepper, set aside.

  3. In a large sauté pan, add onion, bell pepper and ground turkey. Brown until turkey is fully cooked and veggies are softened.

  4. Mince garlic, and add to turkey mixture, cooking one minute. Remove from heat.

  5. In a large soup pot, add tomato sauce, Rotel, beans, vegetarian chili, diced tomatoes, frozen corn, chicken stock, chili powder, cayenne, cumin and garlic powder. Stir until well mixed.

     

  6. To the pot, add turkey mixture. Bring to a boil, then turn down to a simmer.

    Simmer 15 minutes.

  7. Serve by itself or over rice, garnishing with sour cream and cheese if you like. Cornbread's not a bad idea either 😉

Recipe Notes

Use cayenne to taste. If you like it with a little more kick, add 1/4 of a tsp at a time. If you like less kick, start with just a 1/4 of a tsp. Remember, you can always add more, you can't take it back out!
