Strawberry Cheesecake Pie
Everything the name implies. Strawberry. Cheesecake. Pie. All of the goodness, wrapped into one. It's a winter dessert, a summer dessert, a hey, this would be great for breakfast, kind of dessert. Easy peasy, and just a tiny bit of baking, my kind of dessert.
Ingredients
- 1.5 cups Graham cracker crumbs
- 1/3 cup Sugar
- 6 tbsp Butter Melted
- 8 oz Cream cheese softened
- 1 cup Powdered sugar
- 1 cup Heavy cream
- 1 tbsp Vanilla
- 2 pints Fresh strawberries, Stems cut off, and sliced into half
- 2 Strawberry pie glaze Marzetti's or Litehouse
- 1/2 cup Sugar
Instructions

Spay a pie plate with nonstick spray.

In a bowl, mix graham cracker crumbs, 1/3 cup sugar and melted butter unitil evenly combined. Place in pie plate and use fingers to mold mixture up into sides of pie plate until evenly distributed.

Cook pie crust in oven at 350, for 8 minutes and remove to cool.

In a medium bowl, add trimmed and sliced strawberries, pie gel and 1/2 cup sugar and mix. Trim and slice strawberries and add to gel mixture. Set aside.

In a large bowl, with a handheld mixer, mix softened cream cheese and powdered sugar.

In a separate bowl, mix heavy cream and vanilla on high until stiff peaks form. Fold whipped cream into cream cheese mixture with a spoon, rubber spatula. Pour cheesecake mixture in to pie shell. Pour strawberry mixture over cheesecake mixture.
Chill one hour. Serve.
