Ingredients

  • 3 lbs Flap meat
  • 1/2 cup Orange juice
  • 1 cup Water
  • 1/3 cup Lime juice
  • 1/2 cup Red wine vinegar
  • 1/4 cup Oil
  • 4 cloves Garlic
  • 1/8 tsp Ground cloves
  • 1 tbsp White pepper
  • 1 tbsp Cumin
  • 1 tbsp Mexican oregano
  • 1.5 tbsp Salt
  • 1 tbsp Chili Powder
  • 1/2 tsp Chili flakes
  • 1 Orange Sliced
  • 1 Onion Sliced
  • 1 Cilantro bunch Chopped
  • Corn tortillas Street taco sized
  • Cilantro For serving
  • Onion For serving

Instructions

  1. Add all ingredients in to a gallon sized zippered plastic bag. Seal and shake to mix the marinade.

  2. Add flap meat to bag, seal and shake. Place into the refrigerator and let marinate at least four hours or more.

  3. Grill on barbecue at 350 until cooked to medium rare/medium (preference).

  4. Remove from grill. Let rest 10 minutes. Slice and serve with street taco sized corn tortillas, cilantro and onion.
